Would you believe me if I told you that I created this recipe on a whim? Sometimes the best foods are created when you least expect it. I was craving something different than I usually eat for breakfast, or in my case, brunch. I had a pack of tortillas that I did not want to go to waste. Along with some eggs, bacon and cheese. I also prefer omelets over scrambled eggs. Thus this breakfast omelet quesadilla was created! Of course breakfast quesadillas are not original but I made this with my own twist. Think of it like some sort of hybrid food. Call me Michaella the Scientist and step into my lab! haha

As much as I love food, eggs are on the lower spectrum of enjoyable foods. I prefer to skip right to lunch. However, even if you're not a breakfast person like me, this recipe will still be very satisfying and filling. What I love the most about this breakfast omelet quesadilla is that you can add your favorite fillings to it. After all, it is partially an omelet. It's the versatility for me! Breakfast Quesadilla
Prep time: 5 minutes
Cook time: 20 minutes
Total time: 25 minutes
Ingredients
1 sweet onion (optional)
2 strips of bacon
2 eggs
2 slices of cheddar cheese
¼ cup Shredded mozzarella cheese
1 flour tortilla
1 tablespoons of butter
Arugula (optional)
¼ tsp garlic powder
¼ tsp onion powder
¼ tsp salt or chicken bouillon powder
¼ tsp black pepper

Large Frying pan
Spatula
Small bowl

Instructions
Cut a few slices of the sweet onions and set aside.
Heat pan until hot on medium. Add butter and sliced onions to pan.
Sauté onions until caramelized (light brown) then remove from pan and set aside.
Add bacon to pan and cook until both sides are crispy. Remove from the pan and chop it into small pieces.
Beat two eggs and seasonings in a small bowl. Then add eggs to the hot pan.
Let the eggs cook thoroughly on medium heat for about 4 minutes. Do not scramble.
Add the cheddar cheese slices. Let the cheese melt then add onions and bacon. Place tortilla on top and lightly press.
Let the tortilla sit for about 1-2 minutes then flip with your spatula. Add shredded mozzarella cheese and arugula.
Fold the egg and tortilla like an omelet. Toast both sides of the tortilla by flipping.
Remove from the pan and cut in half.
Serve with your favorite breakfast sides or eat by itself!
